Commercial/Institutional Recipe for Chow Mein Base (Sauce)

Yield: Approximately 28.5 cups (slightly more than 1 3/4 gallons)

Chow Mein
Curry Chicken

Vegetable Medley

Ingredients

15 lbs Oyster sauce
3 cups soy sauce
1/2 cup sesame oil
1 cup Mushroom soy sauce

Directions

Mix all ingredients in a large container.
Label the container with contents name and mix date.
Refrigerate until use (use within one week).

Conversion Notes:
Common Oyster Sauce can size is 5 pounds
1 5 pound can of oyster sauce is equal to 1/2 US gallon or 8 US cups.

For smaller batch sizes, use the following ingredient amounts:

1/2 gallon+ base
1 can oyster sauce
1 cup soy sauce
3 tbsp sesame oil
5 tbsp Mushroom soy sauce

1 quart+ base
4 cups oyster sauce
1/2 cup soy sauce
1 1/2 tbsp sesame oil
2 1/2 tbsp Mushroom soy sauce

1 pint+ base
2 cups oyster sauce
1/4 cup soy sauce
3/4 tbsp sesame oil
1 1/4 tbsp mushroom soy sauce

1 cup + base
1 cup oyster sauce
2 tbsp soy sauce
2 teaspoon sesame oil
3 1/2 teaspoon mushroom soy sauce
