Korean Cooking

Korean cooking is based on food items and techniques acquired during a long history of migration, assimilation, subjugation, warfare, and peaceful trade, as well as the effects of climate, geography, and location.

Given that Korea is located on a peninsula and so is surrounded on three sides by ocean, seafood is an important source of food items in Korean cooking. Fish, shellfish, seaweed, and other ocean bounty form the basis of a great many Korean traditional dishes.

Korea is mostly mountainous terrain with fertile valleys and coastal areas where the majority of agriculture is conducted. While rice is the predominant crop, these agricultural areas produce a variety of other crops suited to the temperate climate of the peninsula.

The mountainous country also produces a large variety of indigenous plants and herbs which are traditionaly foraged when each is in season. These "mountain foods" provide seasonal variety to the vegetables and fruits harvested from the various fields and orchards.
