Honey Lotus Root

달콤한연근
This is a variation of sweetened lotus which is a very popular side dish included in the ban chan array served at many Korean Restaurants.

Ingredients

8

ounces

lotus root

2

cups

water for boiling

1

tablespoon

salt

1

tablespoon

sugar

1/2

teaspoon

white sesame seeds

1

tablespoon

lemon juice

1

teaspoon

honey

1/2

teaspoon

sesame oil

1/2

cup

of water

Procedure

Prepare the Lotus:

Fresh -

If using whole root - Wash and peel the root.

Whole or sliced - Heat water to boiling, add lotus root and salt.

Reduce heat to low and simmer for 20 minutes.

Remove from heat, drain, and cool.

Whole - After boiling and cooling, carefully cut the root (root may be tough) into approximately 1/8 to 1/4 inch slices.

Dried -

Completely submerge in water.

Allow to soak from 2 to 4 hours.

Pour of excess water and drain thoroughly.

Bring 2 cups water to a boil then add salt and lotus root.

Reduce heat to low and simmer for 20 minutes.

Remove from heat, drain, and cool.

If using whole root, carefully cut the root (root will be tough) into approximately 1/8 to 1/4 inch slices.

Melt the sugar over low heat until it begins to caramelize.

Add 1/2 cup water and lemon juice and return to a simmer.

Add sliced lotus and simmer until liquid is nearly gone.

Remove from heat and cool.

Serve:

Dress with honey, sesame oil, sesame seed and serve.
